Régis Saint-Geniez has worked with the Bras family for more than 30 years. He first worked alongside Michel and grandma Bras as a simple apprentice, now he works alongside Sébastien as his faithful second in command.
He was there when it all started at Lou Mazuc in 1984, there for the opening of Le Suquet in 1992 and there for the transition between Michel and Sébastien. "You could not wish for a more faithful person" confides Sébastien, " a pillar of the establishment, the guarantor of the Bras spirit and a friend." Their complicity bursts into life as soon as the kitchen kicks into action. With both of them strategically placed, working close to the doors opening out to the restaurant, not a single dish leaves the kitchen without their approval, a mutual glance suffising to indicate that this or that dish needs a slight adjustment. Direct, frank and naturally authoratative, Sébastien often describes him as "an iron fist in a velvet glove." He leads the brigade with firmness. But his gentler side becomes immediately apparent when it comes to organising the 'post-service' activities or the events for the Bras KC, an association of which he is the lifetime president, when his joie de vivre is contagious.
