"Showcasing local producers, growers, farmers and craftsmen, these men and women who are the pride of our region" was for Michel Bras one of the reasons for embarking on this project.
Thus, each and every capuchin served is crowned with a card, a standard bearer of quality, detailing the origins of the ingredients and the addresses of the producers. Prime Aubrac beef from the Maison Conquet, Galabar black pudding from Castets, lentils from la Planèze, fruits from Marcillac, vegetables from Saint-Côme to Port d’Agrès, chicken from Gascony, porc noir (pork) de Bigorre, "single vintage" fruit juices... a "Bras inventory" of products, all carefully chosen. Many of the ingredients used have been awarded the 'Slow Food' label.
